Our Summer Thus Far...

It is wedding season at work, and there are flowers everywhere! It is lots of work, but lots of fun.

WHK had an excellent report from the nephrologist! Woo hoo!

We went to the most beautiful wedding of the flower girl from our own wedding fifteen years ago! For more photos of this cute couple, click here.

WHK has hijacked my hutch to make his first ever Lego Hall of Fame. Get your tickets now because this is a limited showing!

We made a refrigerator swap with my parents. WHK is enamored with the ability to get cold water and crushed ice cubes at his convenience. Life is good!

Our Trip In Pictures

Our Trip To San Antonio!

We had a most wonderful trip to San Antonio more photos to come soon (it is VBS week!)...here are some fun facts about our trip:

• Daddy had to work, so we played! My BFF (since 1985), Amy, and two of her three boys came along to join in the fun!


• We stayed at a wonderful hotel that served Texas shaped waffles every morning for breakfast!


• Our hotel was so close to the Alamo, we spent many a night enjoying its beauty while eating ice cream and letting the boys play.


• We spent two fun-filled days at Sea World visiting Shamu and friends! We were able to feed and pet the sweet dolphins both days!


• We enjoyed the beautiful River Walk and ate delicious Mexican food every night!


• We saw (and remembered) the Alamo! We listened to a fascinating lecture and buffed up on our Texas history. Fact: 30 men with WHK's namesake gave their lives at the Alamo--isn't that interesting?


• We had a brush with fame! We met Big Brother (season 5) contestant Nakomis! Amy is a loyal follower of the show and was quite excited (photo to come soon...).


• We came home and jumped right into VBS...it has been a crazy time and we are ready for some lazy days of summer.

I Love To Cook Without A Book!

It's true. My Grandma Marcette had a little cross stitch picture in her kitchen with that phrase, so I guess it is in my genes. Last night I came up with a pretty good concoction. WHK said I should call it "Kristin's Vegetable and Meat Explosion" but I will call it Mexican Chicken and Rice. Here's how I did it:

~saute 1/2 onion in canola oil
~add 6-7 chicken tenderloins cut in to bite size pieces
~season with one package of taco seasoning (add a little water per the package directions)
~in a separate pot, cook one package of Mahatma Saffron Rice see the package here.
~continue simmering chicken on low
~once your rice is nearly done, transfer into your chicken skillet, add one can of diced tomatoes and mix together

That's it! It was tasty like that, but it would also be good with a little cheese on top or rolled in a flour tortilla.

Today is June 1. If our hosting plans had gone according to our will, we would be on the verge of meeting our new friend, Alex from the Ukraine. God has another wonderful plan for both our family and for Alex. Alex has either been adopted in his own country or is coming to the US to stay with another host family. Please join us in praying for Alex--pray that no matter where his path takes him he will come to know Jesus as his personal savior and will find a forever family here on this earth.
